A Fantastic Flavour of Jersey: Ocean Restaurant at One-O-One


What happens when two great chefs create a menu together? As you can imagine, the results are extraordinary. I was recently invited to experience a flavour of Jersey with Ocean Restaurant at One-O-One in Knightsbridge. Mark Jordan, a Michelin starred chef from Jersey and Pascal Proyart, an equally talented chef from London put together an extraordinary menu. It was a great introduction to both One-O-One and to Ocean Restaurant.

One-O-One Restaurant, conveniently located on Knightsbridge high street in the Sheraton Park Tower, specializes in contemporary French style fish and seafood. I’d never been before, but it’s recognised as the third best restaurant in London by The Sunday Times Food List in 2015. Executive Head Chef Pascal Proyart, originally from Brittany in France, is passionate about sustainable yet innovative fish dishes. Mark Jordan, Executive Head Chef of Michelin starred Ocean Restaurant at The Atlantic Hotel and co-owner of Mark Jordan at the Beach in Jersey is just as keen on sustainability. He works closely with local producers to bring the freshest seafood and meat to diners. They decided to showcase the best of Jersey flavours, serving specially created tasting menus as well as their own signature dishes.

One-O-One chefs
I had an amazing weekend in Jersey last year, with two fantastic meals at Longueville Manor and Ormer, so I knew that I was in for a treat. Jersey is well known for its produce, as is Brittany and the Brittany seaweed butter that came with the homemade bread was really tasty. We started with a chilled glass of champagne to accompany the first course, Royal King crab with pastilla, celeriac, apple and beetroot. The crunch of the pastilla balanced the softness of the crab whilst the apple and beetroot provided a fruity hit.

For our next course, I sampled the white wine, a Sauvignon Blanc de Touraine Loire Valley, 2014. It went perfectly with the squid rice-less risotto with pickled cauliflower and anchovy cream. I loved the umami flavour of this dish, and the subtlety of the anchovy cream.

The third course was an intriguing white halibut with abalone, sunshokes, hazelnut accompanied by a béarnaise jus. I’d never tried abalone before, it’s an edible sea snail and whilst I’m not a huge snail eater, this was a revelation. It had a great chewy texture which worked really well with the toasted hazelnuts, savoury béarnaise jus and sunshokes. Now I confess I had to look these up, sunshokes are actually Jerusalem artichokes.

As for our next dish, it was this beautifully presented scallop with foie gras, sea-spinach, wild mushrooms and vermouth. This truly was a match made in heaven, with the delicate vermouth sauce lifting it to great heights.

One-o-one meal
Although the Jersey beef with lobster, beef marmite, dauphinoise and cappucino was possibly my favourite out of all our courses. This sophisticated take on a traditional surf and turf dish was as tasty as it looked. Although it resembled a real cappuccino, upon tasting it turned out to be a savoury truffle infused mousse. Jersey beef is justifiably famous and I wouldn’t normally eat it so rare but this one was so tender that I finished it all easily.

I had a very quick taste of this selection of Jersey cheeses. They were accompanied by a delectable fig chutney and served with crusty walnut loaf.

And the final course was a stunning 55% Vahlrona chocolate pavé decorated with gold leaf and served with praline ice cream. I sneaked into the kitchen to get a few shots, as I had to leave…and I also got a little taste while I was there. Well I try to be thorough ;-). You could really taste the quality of the chocolate used. The plates were almost as good looking as the dessert. All in all, it was a wonderful lunch and a great showcase of the island’s flavours.

  • I don’t doubt the food was delicious, but the portions look ridiculously small. I feel ripped off in restaurants like this. I’d love to eat at One-O-One if somebody else was paying, ha,ha,ha!

    • Actually the portions got bigger and bigger as the meal went on, the beef was pretty large and I was stuffed afterwards without even eating most of the cheese or dessert

  • I saw photos of this meal unfolding all throughout my twitter and instagram feed and it kept me salivating all afternoon. All such top quality ingredients, done so elegantly! I’m really keen to visit Jersey as I’ve heard people rave about the produce and food there so often!

    • In Jersey, they even have free potatoes that you can take away at the airport! The place is one of the best I’ve visited for fresh produce
